Pennywort & Three Cornered Leek Salad with ‘Wildly Pimped’ Instant Packet Noodle

Ingredients
1x large bowl of pennywort leaves
200g instant packet noodles
1x large bunch of finely sliced three-cornered leek or
wild/spring onions
For the dressing
1 clove garlic, grated
1 tablespoon grated root ginger
2 tablespoons vinegar (I use white)
1 tablespoons honey
(or sweet alternative)
2 tablespoons peanut butter
1 tablespoon vegetable oil
1 tablespoon soy sauce
Method
Wash the pennywort leaves.
Cook the noodles in boiling water, according to the instructions on the pack. When cooked, rinse them thoroughly under cold running water and set aside to drain.
Combine the garlic, ginger, vinegar, honey, peanut butter and oil in a screw top jar and shake well.
In a large mixing bowl, combine the cooked noodles, pennywort and three-cornered leek. Pour over the dressing from the jar. Toss thoroughly and serve immediately.
Scatter with edible flowers.
